Ingredients
1 cup quinoa, rinsed and drained
2 cups water
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 lemons, juiced
1/4 cup chopped fresh parsley
1/4 cup chopped fresh dill
1/2 cup crumbled feta cheese, optional
Method
1In a medium saucepan, bring the quinoa and water to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the water has been absorbed.
2Heat the olive oil in a small saucepan over medium heat, then add the salt and pepper and stir to combine.
3Add the freshly squeezed lemon juice to the saucepan with the olive oil and stir to combine, bringing the mixture to a simmer for 2-3 minutes, or until it has reduced slightly.
4In a large bowl, combine the cooked quinoa, lemon juice and olive oil mixture, and chopped parsley and dill, stirring to combine.
5Taste the quinoa mixture and adjust the seasoning as needed, adding more lemon juice, salt, or pepper to taste.
6To serve, divide the quinoa mixture among individual bowls and top with crumbled feta cheese, if using.
