Ingredients
1 cup rolled oats
2 cups water
2 tablespoons olive oil
4 salmon fillets, skin removed
1 teaspoon salt
1/2 teaspoon black pepper
4 large carrots, peeled and chopped
2 tablespoons honey
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
Method
1Bring the water to a boil in a medium saucepan, then reduce the heat to low and add the oats, cooking until the oatmeal is creamy, about 5-7 minutes.
2Preheat the grill to medium-high heat and season the salmon fillets with salt and pepper.
3Grill the salmon for 4-5 minutes per side, until it reaches an internal temperature of 145°F.
4Toss the chopped carrots with olive oil, honey, and lemon juice on a baking sheet, roasting in the oven at 425°F for 20-25 minutes, or until deeply caramelized and tender.
5While the carrots are roasting, prepare the oatmeal according to the package instructions, using the remaining water and a pinch of salt.
6To assemble, divide the cooked oatmeal among four plates, topping each with a grilled salmon fillet, a spoonful of roasted carrots, and a sprinkle of chopped parsley.
