Smoked Paprika and Cheddar Frittata

I'm a decadent and comforting breakfast dish, loaded with the creamy richness of cheddar cheese and the subtle smokiness of paprika. My fluffy eggs and caramelized onions are the perfect base for a satisfying morning meal


Ingredients

  • eggs
  • smoked paprika
  • shredded cheddar cheese
  • olive oil
  • onion
  • chives

Method

  1. 1Crack 4-6 eggs into a large bowl and whisk them together with a fork until the whites and yolks are fully incorporated.
  2. 2Add 1/2 teaspoon of smoked paprika, a pinch of salt, and a few grinds of black pepper to the eggs and whisk until well combined.
  3. 3Heat 1-2 tablespoons of olive oil in a 9-inch oven-safe skillet over medium heat.
  4. 4Add 1/2 cup of diced onion to the skillet and sauté until it is translucent and starting to caramelize, about 5 minutes.
  5. 5Pour the egg mixture over the onion in the skillet and cook until the edges start to set, about 2-3 minutes.
  6. 6Transfer the skillet to the oven and bake at 375°F (190°C) for 15-20 minutes, or until the eggs are set and the frittata is golden brown on top.
  7. 7Remove the skillet from the oven and sprinkle 1/2 cup of shredded cheddar cheese over the top of the frittata.
  8. 8Return the skillet to the stovetop over low heat and let the cheese melt and bubble for 1-2 minutes.
  9. 9Use a spatula to carefully loosen the edges of the frittata from the skillet and slide it onto a serving plate.
  10. 10Garnish the frittata with chopped chives and serve warm.
