Ingredients
2 3-oz salmon fillets, skin removed
1 large onions, thinly sliced
1 tbsp olive oil
½ tsp ground cumin
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
1 lemons, cut into wedges
Method
1Preheat the oven to 425°F (220°C).
2Line a large baking tray with parchment paper, leaving enough overhang for easy removal.
3In a large bowl, toss the sliced onions with 1 tablespoon of olive oil, cumin, smoked paprika, salt, and pepper until they are evenly coated.
4Spread the onions out in a single layer on the prepared baking tray and roast in the oven for 20-25 minutes, or until deeply golden and fragrant.
5Place the salmon fillets on a separate baking tray lined with parchment paper, drizzle with the remaining 1 tablespoon of olive oil, and season with salt and pepper.
6Bake the salmon in the oven for 12-15 minutes, or until it reaches an internal temperature of 145°F (63°C).
7Remove both the onions and salmon from the oven and let the salmon rest for a few minutes before serving, garnished with lemon wedges.
8To serve, place a salmon fillet on each plate and top with a spoonful of the roasted onions.
