This vibrant stir-fry is a colorful and flavorful celebration of vegetables and pork, with the bold flavors of garlic and ginger mingling with the sweetness of onions and bell peppers. The tender pork and crunchy vegetables make for a satisfying and filling meal.


Ingredients

  • 1 pound pork loin, sliced into thin strips
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon vegetable oil
  • 1 large onion, sliced
  • 2 large bell peppers, sliced
  • 2 large carrots, peeled and grated
  • 2 cups mixed vegetables, such as broccoli and snap peas
  • 2 teaspoons soy sauce
  • 1 teaspoon oyster sauce
  • Salt and pepper, to taste

Method

  1. 1Heat the wok or a large skillet over high heat, then add 1 tablespoon of vegetable oil and swirl it around to coat the pan.
  2. 2Add the sliced pork and cook, stirring constantly, until it is browned and cooked through, about 3-4 minutes.
  3. 3Remove the pork from the pan and set it aside, then add the minced garlic and grated ginger and stir-fry until fragrant, about 30 seconds.
  4. 4Add the sliced onion and cook, stirring occasionally, until it is translucent and starting to caramelize, about 4-5 minutes.
  5. 5Add the sliced bell peppers and cook, stirring occasionally, until they are tender, about 3-4 minutes.
  6. 6Add the grated carrots and mixed vegetables, and cook, stirring constantly, until they are tender-crisp, about 2-3 minutes.
  7. 7Return the cooked pork to the pan and stir in the soy sauce and oyster sauce, then season with salt and pepper to taste.
