4 large eggs
2 cloves garlic, peeled and minced
1/2 cup fresh spinach leaves, chopped

2 tablespoons butter
1 tablespoon grated cheddar cheese, optional
1/4 cup diced red bell pepper, optional
1/4 cup diced onion, optional
1 tablespoon chopped fresh parsley, optional
1 tablespoon lemon juice, freshly squeezed
Method
1Crack the eggs into a bowl and whisk them together with a fork, adding a pinch of salt and pepper to taste.
2Melt 1 tablespoon of butter in a non-stick skillet over medium heat and cook the minced garlic for 4-5 minutes, stirring occasionally, until it's deeply golden and fragrant.
3Add the chopped spinach leaves to the skillet and cook for 1-2 minutes, stirring constantly, until they're wilted and the liquid has evaporated.
4Pour the whisked eggs over the spinach and garlic in the skillet and cook for 2-3 minutes, stirring gently, until the edges start to set.
5Use a spatula to gently scramble the eggs, breaking them up into soft curds, and cook for an additional 2-3 minutes, until they're almost set.
