Ingredients
- 4½ slices bacon, diced
- 1½ medium onions, thinly sliced
- 2¼ cloves garlic, minced
- ¾ large red bell pepper, sliced
- 1½ medium carrots, peeled and grated
- ¾ cup snow peas, sliced
- 1½ tablespoons vegetable oil
- 1½ tablespoons Thai red curry paste
- 1½ tablespoons soy sauce
- ¾ tablespoon fish sauce
- ¾ teaspoon grated ginger
- Salt and pepper, to taste

- 1Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat, until it starts to shimmer
- 2Add the diced bacon and cook, stirring occasionally, until crispy and golden brown, about 5 minutes
