Thai-Style Bacon and Vegetable Stir-Fry

This spicy and savory stir-fry is a bold and exciting combination of crispy bacon, crunchy vegetables, and the rich flavor of Thai red curry paste. The snow peas add a delightful burst of freshness to this filling and satisfying meal.


Ingredients

  • 4½ slices bacon, diced
  • 1½ medium onions, thinly sliced
  • 2¼ cloves garlic, minced
  • ¾ large red bell pepper, sliced
  • 1½ medium carrots, peeled and grated
  • ¾ cup snow peas, sliced
  • 1½ tablespoons vegetable oil
  • 1½ tablespoons Thai red curry paste
  • 1½ tablespoons soy sauce
  • ¾ tablespoon fish sauce
  • ¾ teaspoon grated ginger
  • Salt and pepper, to taste

Method

  1. 1Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat, until it starts to shimmer
  2. 2Add the diced bacon and cook, stirring occasionally, until crispy and golden brown, about 5 minutes
  3. 3Remove the cooked bacon from the wok with a slotted spoon and set aside, leaving the drippings behind
  4. 4Add the remaining 1 tablespoon of vegetable oil to the wok, then add the sliced onions and cook, stirring frequently, until they are translucent and starting to caramelize, about 4 minutes
  5. 5Add the minced garlic, sliced bell pepper, grated carrots, and sliced snow peas to the wok, cooking for an additional 2-3 minutes, until the vegetables are tender but still crisp
  6. 6Add the cooked bacon back into the wok, along with the Thai red curry paste, soy sauce, fish sauce, and grated ginger, stirring constantly to combine, for about 1 minute, until the mixture is heated through and fragrant
