I'm a flavorful and exotic twist on the classic omelette, filled with the sweetness of caramelized onions and the tanginess of feta cheese. My spicy kick of cumin and paprika is balanced by the richness of butter and the freshness of scallions
Ingredients
2 tablespoons unsalted butter, softened
4 eggs
1/2 cup thinly sliced onions
1/4 cup chopped scallions
1/4 cup crumbled feta cheese
1 tablespoon pomegranate molasses
1 teaspoon ground cumin
1/2 teaspoon ground paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Method
1Melt 1 tablespoon of butter in a 6-inch skillet over medium heat. Once the butter has melted, tilt the pan to ensure it's evenly coated.
2Add the sliced onions to the pan and sauté, stirring occasionally, until they're translucent and golden, about 5 minutes.
3Add the chopped scallions and cook, stirring occasionally, for an additional 2 minutes, until fragrant.
4In a small bowl, beat the eggs with a fork until they're lightly beaten.
5Add the ground cumin, paprika, and a pinch of salt and pepper to the eggs and stir to combine.
6Pour the egg mixture over the onions and scallions in the pan, and cook, stirring occasionally, until the eggs start to set, about 2-3 minutes.
7Use a delicate spatula to gently fold the omelette in half, and cook for an additional 1-2 minutes, until the cheese is melted and the eggs are cooked through.
8Slide the omelette out of the pan onto a plate, and garnish with chopped parsley and serve with a dollop of pomegranate molasses and a squeeze of lemon.
