Ingredients

  • 2 cups vegetable broth, low sodium
  • 1 cup rolled oats, old-fashioned
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 4 large eggs
  • 1/4 teaspoon kosher salt
  • freshly cracked black pepper
  • 2 tablespoons chopped chives
  • 1 teaspoon sumac powder, for garnish

Method

  1. 1Bring the vegetable broth to a gentle simmer in a medium saucepan over medium-high heat.
  2. 2Stir in the rolled oats and reduce heat to medium-low; cook for 5 to 7 minutes, stirring occasionally, until the oats are tender and the mixture has thickened to a creamy consistency.
  3. 3Remove the pot from heat and stir in the butter and thyme leaves until fully incorporated and glossy.
  4. 4Transfer the oatmeal to four warm bowls, dividing it evenly, and sprinkle generously with grated Parmesan and black pepper.
  5. 5Fry the eggs in a separate non-stick skillet over medium heat until the whites are set but the yolks remain runny, approximately 3 minutes.
  6. 6Slide a fried egg directly onto the center of each bowl of oatmeal.
  7. 7Garnish with chopped chives and a dusting of sumac for color and acidity before serving immediately.
