Beef and Mushroom Stir-Fry

Ingredients

  • 1 pound beef (sirloin or flank steak), sliced into thin strips
  • 2 cups mixed mushrooms (button, cremini, shiitake), sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Method

  1. 1Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat, until it shimmers and slightly smokes.
  2. 2Add the beef to the wok and cook for 3-4 minutes, or until browned, then transfer it to a plate and set aside.
  3. 3In the same wok, add the remaining 1 tablespoon of vegetable oil, then add the mushrooms and cook for 2-3 minutes, or until they release their liquid and start to brown.
  4. 4Add the minced garlic and grated ginger to the wok and stir-fry for 30 seconds, until fragrant.
  5. 5Add the broccoli florets and sliced bell peppers to the wok, cooking for 2-3 minutes, or until they start to soften.
  6. 6Return the cooked beef to the wok, then add the soy sauce and oyster sauce (if using), stirring everything together to combine.
  7. 7Cook for an additional 1-2 minutes, until the sauce has thickened and the ingredients are well coated.
  8. 8Season the stir-fry with salt and pepper to taste, then garnish with chopped green onions and serve immediately.
