The smoky flavor of cumin and the tang of lemon juice perfectly complement the charred taste of grilled chicken in this classic Shawarma. The creamy yogurt sauce brings everything together, making each bite a delight.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into thin strips
  • 1/4 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 4 pita breads, warmed
  • 1 cup tomato, sliced
  • 1 cup onion, thinly sliced
  • 1/4 cup tahini sauce

Method

  1. 1In a large bowl, whisk together yogurt, garlic, lemon juice, cumin, smoked paprika, and cayenne pepper, then add the chicken and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  2. 2Preheat the grill to medium-high heat, about 400°F.
  3. 3Remove the chicken from the marinade and grill for 5-7 minutes per side, or until the chicken is cooked through and slightly charred.
  4. 4Warm the pita breads by wrapping them in foil and heating them on the grill for 2-3 minutes.

  6. 6Assemble the shawarma by spreading a layer of tahini sauce on each pita, then adding sliced chicken, tomato, and onion.
